    From 1978 on, Michel Couvreur having settled in the French region of Burgundy, he decided to make it his life’s work and to dedicate his research to a process which he once compared to cross-fertilisation.

    Michel Couvreur tracks each cask individually, and handles them slowly and precisely using gravity only.
    Each bottle needs particular care — they are hand-corked, hand-waxed and hand-labelled.

La Cave humide: Our Identity

Michel Couvreur’s damp, limestone cellar is part of our terroir. Every cask spends time there, exposed to nearly 100% humidity, constant 12°C, and walls covered in Thorula. Dark and silent, the cellar’s unique atmosphere can cause casks to leak, but it also gives the whisky a distinct, cave-like character—intangible yet unmistakable. This mysterious place has become our true heart.

Cask Sourcing

We source freshly emptied, untreated barrels directly from Andalusian bodegas to ensure full traceability. Unlike mass-seasoned barrels used briefly, we seek those aged with sherry long-term—for their purity, deep flavor saturation, and complex oxidative notes.

Our Range

We sell about 70,000 bottles annually—roughly 10% of our stock—split evenly between France and over 30 other countries. Our production is limited, with no second label, no bulk sales, and no on-site shop. Our whiskies are available only through wine merchants.
